CHEESE SAUCE  (starts with a classic white sauce)
Preparation and Cooking Time: 6 minutes

Melt 1 Tbs of butter in a small skillet. Measure the butter using the marks on the wrapper, at least until you just know from experience how much to cut.


 


Add 1 Tbs all purpose flour to the pan and whisk it around vigorously with a whisk, or a fork. Cook just until it has a little more color than the melted butter. You have just prepared the famous “roux”, (pronounced ROO) that recipes use so nonchalantly without explaining what it is.


 

Add 1 cup of milk in a steady stream and continue to whisk until it thickens nicely. It won't take long after the sauce begins to boil.

 


This first stage is a classic white sauce, which can be the base for many others.


 


Measure out a generous half cup of shredded cheese, turn the heat off under the pan and stir in the cheese thoroughly. Taste it. If you want it cheesier, stir in some more cheese
